Apricot Chicken – Slow Cooker
This Mediterranean inspired dish is a simple to prepare when you are pressed for time. You can add additional flavor by adding sultans, raisins, or cranberries.
- 2½ lbs chicken breast, cut into bite sized pieces
- 6 oz. dried apricots
- ½ cup honey
- 1 onion, diced
- 2 tablespoons apple cider vinegar
- ⅓ cup chicken broth
- ¼ teaspoon cinnamon
- ¼ teaspoon black pepper
- ½ teaspoon ground ginger
- ½ teaspoon salt
- Add all ingredients to slow cooker and mix well. Cook 8-9 hours on low. Serve with cooked couscous.
