Apricot Chicken in the crockpot

This Mediterranean inspired dish is a simple to prepare when you are pressed for time.   You can add additional flavor by adding sultans, raisins, or cranberries.

Apricot Chicken – Slow Cooker

Ingredients
  • 2½ lbs chicken breast, cut into bite sized pieces
  • 6 oz. dried apricots
  • ½ cup honey
  • 1 onion, diced
  • 2 tablespoons apple cider vinegar
  • ⅓ cup chicken broth
  • ¼ teaspoon cinnamon
  • ¼ teaspoon black pepper
  • ½ teaspoon ground ginger
  • ½ teaspoon salt

Instructions
  1. Add all ingredients to slow cooker and mix well. Cook 8-9 hours on low. Serve with cooked couscous.
