The bechamel sauce takes time to do correctly so make sure you don’t ignore the sauce while working on other things. You can also substitute with a hollandaise sauce too.
  • 8 eggs
  • 8 tablespoons milk
  • 2 tablespoons butter, diced
  • 2 tablespoons flour
  • 1½ cup milk
  • ½ teaspoon salt
  • Pinch of thyme
  • 1 cup cheese
  • Parsley flakes
  • Salt and pepper to taste

  1. Preheat oven to 325 degrees and grease 4 oven safe ramekins.
  2. Put two eggs into each ramekin, top with 2 tablespoons milk, salt and pepper to taste.
  3. Put ramekins into center rack and bake for 30 – 40 minutes, until whites are firm and yolk begins to set.
  4. Meanwhile, melt butter in saucepan over medium low heat, then whisk in flour.
  5. Cook mixture for 2 minute then add milk, salt, and pinch of thyme. Cook for 15 – 20 minutes stirring constantly.
  6. Remove sauce from heat and fold in cheese.
  7. Remove eggs from ramekins on plate, and cover with sauce.
  8. Sprinkle with cheese and garnish with parsley flakes.
