Beefy Cheesy Vegetable Casserole

This is one of those home cooked comfort meals mom would make on a cold winter night.
Ingredients
  • 1 tablespoon extra virgin olive oil
  • 1 lb. ground beef
  • ½ small onion, chopped
  • 1 green pepper, chopped
  • 14.5 ounce can diced tomatoes
  • ½ cup salsa
  • 1½ cup water
  • 1 lime, juiced
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • ¾ cup uncooked rice
  • ½ cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions
  1. Heat olive oil over medium heat in skillet, add beef and cook until browned.
  2. Add onion, green pepper, tomatoes, salsa, salt and pepper to taste.
  3. Add water, lime juice, sugar, vinegar, rice, and mix well.
  4. Bring to boil, cover, and simmer on low heat 30 minutes without stirring.
  5. Uncover, stir and check water level. If water remains, continue cooking uncovered until water is gone, stirring occasionally.
  6. Serve in bowl and sprinkle cheese on top.
