Beefy Cheesy Vegetable Casserole

This is one of those home cooked comfort meals mom would make on a cold winter night.
Ingredients
- 1 tablespoon extra virgin olive oil
- 1 lb. ground beef
- ½ small onion, chopped
- 1 green pepper, chopped
- 14.5 ounce can diced tomatoes
- ½ cup salsa
- 1½ cup water
- 1 lime, juiced
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar
- ¾ cup uncooked rice
- ½ cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Heat olive oil over medium heat in skillet, add beef and cook until browned.
- Add onion, green pepper, tomatoes, salsa, salt and pepper to taste.
- Add water, lime juice, sugar, vinegar, rice, and mix well.
- Bring to boil, cover, and simmer on low heat 30 minutes without stirring.
- Uncover, stir and check water level. If water remains, continue cooking uncovered until water is gone, stirring occasionally.
- Serve in bowl and sprinkle cheese on top.
