Cheese Tortellini With Roasted Garlic Sauce

Ingredients
  • 3 tablespoons olive oil
  • 2 whole garlic bulbs
  • 1 cup chicken broth
  • ½ onion, thinly diced
  • 1 cup heavy cream
  • 16 oz (450g) cheese tortellini
  • 1 cup Parmesan or Romano cheese
  • Parsley as garnish

Instructions
  1. Preheat oven to 350ºF. Cut off ⅓ from the top of the garlic bulbs, drizzle with oil olive, and wrap in aluminum foil. Cook for 45 minutes, remove from oven, and set aside. Heat 1 tablespoon olive oil in saucepan over medium heat, add onions, salt and pepper to taste, and cook until translucent. Add chicken broth, squeeze garlic cloves into saucepan, and cook for 5 minutes. Add cream, reduce heat and simmer for 20 minutes, stirring occasionally. Meanwhile, cook tortellini according to directions. Combine tortellini, garlic sauce, and plate. Top with Parmesan cheese, garnish with parsley and serve.
