Rotolare means roll in Italian and that’s exactly what you do with this dish. You can add spinach or escarole to add a nice color contrast.
  • 2 large chicken breasts
  • 4 slices prosciutto
  • 6 slices provolone cheese
  • Italian seasoning
  • Salt and pepper to taste

  1. Preheat oven to 450 degrees.
  2. Place chicken breasts between plastic and pound until thin, approximately ¼ inch thick.
  3. Season each breast with salt, pepper and Italian seasoning.
  4. Add 2 slices prosciutto and 3 slices of provolone to each breast.
  5. Roll chicken from long side and secure with toothpicks.
  6. Place in baking pan and cook 35 minutes until chicken is cooked through.
  7. Remove toothpicks, slice and serve.
