Creamy Tomato Pasta With Bacon

The tangy tomatoes combined with the crispy bacon make this a savory dish that’s sure to please.
Ingredients
- 1 lb. penne pasta
- 1 tablespoon extra virgin olive oil
- 6 slices thick bacon, diced
- 2 leeks, diced
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 pint cherry tomatoes
- ½ cup red wine
- 1 cup fresh peas
- 5.4 oz container Boursin cheese
- Salt and pepper to taste
Instructions
- Cook pasta according to directions, set aside.
- Meanwhile heat olive oil over medium high heat in large skillet. Add bacon and cook until browned. Remove bacon.
- Add garlic, leeks and cook 2 – 3 minutes.
- Add wine to deglaze and reduce by half approximately 2 – 3 minutes. Add tomato paste and mix well. Add tomatoes, season with salt and pepper, cover, reduce to simmer and cook 8 – 9 minutes until tomatoes have burst.
- Uncover, add cheese mixing well. Cook 1 -2 minutes.
- Add peas, bacon, and pasta. Mix well and serve
