Creamy Tomato Pasta With Bacon

The tangy tomatoes combined with the crispy bacon make this a savory dish that’s sure to please.
  • 1 lb. penne pasta
  • 1 tablespoon extra virgin olive oil
  • 6 slices thick bacon, diced
  • 2 leeks, diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 pint cherry tomatoes
  • ½ cup red wine
  • 1 cup fresh peas
  • 5.4 oz container Boursin cheese
  • Salt and pepper to taste

  1. Cook pasta according to directions, set aside.
  2. Meanwhile heat olive oil over medium high heat in large skillet. Add bacon and cook until browned. Remove bacon.
  3. Add garlic, leeks and cook 2 – 3 minutes.
  4. Add wine to deglaze and reduce by half approximately 2 – 3 minutes. Add tomato paste and mix well. Add tomatoes, season with salt and pepper, cover, reduce to simmer and cook 8 – 9 minutes until tomatoes have burst.
  5. Uncover, add cheese mixing well. Cook 1 -2 minutes.
  6. Add peas, bacon, and pasta. Mix well and serve
