Vegetable Soba Soup

This meal is surprisingly hearty considering it contains no meat. Substitute vegetable broth for a vegetarian dish.
Ingredients
  • ¼ cup canola oil
  • ½ lb. shitake mushrooms, julienned
  • ½ lb. Italian button mushrooms, julienned
  • 2 carrots, julienned
  • 1 medium parsnip, julienned
  • 1 large leek, julienned
  • 1 jalapeno pepper, julienned
  • 4 garlic cloves, minced
  • 1 - 2 inch ginger root, peeled, grated
  • 8 cups chicken (or vegetable) broth
  • 5 tablespoons soy sauce
  • 8 oz. package soba noodles
  • 1 bunch green onions, chopped, for garnish
  • Salt and pepper to taste
Instructions
  1. Heat oil over medium high heat in large stock pot. Add mushrooms and cook 6 - 8 minutes until browned. Add vegetables, garlic, ginger to pot, season with salt and pepper, and cook 3 -4 minutes. Add broth and bring to boil. Add noodles, soy sauce and cook 3 -4 minutes. Ladle into bowls, garnish with green onions and serve.
