Farfalle & Sausage with Mustard Cream Sauce

Ingredients
  • 1 lb. farfalle
  • Extra virgin olive oil
  • 4 medium sweet Italian sausages
  • 1¾ cups chicken broth
  • 2 tablespoons course ground Dijon mustard
  • 8 tablespoons crème fraiche or crème Mexicana
  • ½ cup fresh parsley, chopped

Instructions
  1. Bring water in pot to boil and cook pasta until al dente, drain.
  2. Meanwhile, remove casing from sausages and cut into small chucks.
  3. Heat oil over medium heat and cook until meat is golden brown.
  4. Add chicken stock and bring to boil.
  5. Add mustard, crème and simmer just until sauce becomes creamy approximately 20 minutes.
  6. Add sauce and parsley to pasta, coat well and serve.
