This is the perfect meal for those nights when you feel like having breakfast instead. You can also substitute sausage for the bacon.
  • 10 eggs
  • 2 cups heavy cream
  • 4 tablespoons butter, melted
  • ⅓ onion, thinly chopped
  • 4 slices bacon
  • 2 cups cheddar cheese, grated
  • 2 roma tomatoes, sliced thin
  • 4 basil leaves
  • Salt and pepper to taste
  • Parsley flakes

  1. Preheat oven at 350ºF. Cook bacon in non-stick pan, drain and crumble. Beat eggs in large bowl, add cream, butter and season with salt and pepper to taste. Pour in greased baking pan, add onion, bacon crumbles, and sprinkle with cheese. Arrange tomato slices on top and add torn basil leaves in between. Bake for 35-40 minutes or until eggs are thoroughly cooked. Plate and garnish with parsley flakes and a dash of pepper.
