This is a quick and easy meal for busy nights.  At only 430 calories per serving it’s easy on the waistline too.

Healthy Chicken Vegetable Casserole

Serves: 8

  • 3 cups white rice
  • 7 cups water
  • 12 oz can chicken breast
  • 3 celery stalks, chopped
  • 2 carrots, chopped
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 2 15oz cans crushed tomatoes
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

  1. Heat olive oil over medium heat in large stock pot. Add vegetables and cook until onions begin to become translucent.
  2. Add water, tomatoes, chicken and bring to boil. Add rice, lower to simmer, cover and cook for 20 – 22 minutes (do not stir). Remove lid, stir and cook 1 – 3 minutes until desired consistency. Season with salt and pepper and serve.
