Zuppa sposalizio (Italian Wedding soup) is always a favorite in our home. Serve with warm garlic bread for an amazing meal.
Ingredients
  • Meatballs:
  • 1 lb. (450g) ground beef
  • 1 cup (100g) bread crumbs
  • ½ small onion, thinly chopped
  • 2 garlic cloves, minced
  • 2 tablespoons parsley, chopped
  • Salt and pepper to taste
  • Soup:
  • 1½ lbs. (675g) chicken breast, cut into bite sized pieces
  • 1 onion, chopped
  • 14 cups water
  • 6 cups chicken broth
  • 1 bunch escarole
  • 2 eggs
  • ¼ cup (25g) Romano cheese, grated

Instructions
  1. Add water, broth to large stockpot. Drop in the chicken pieces and onion, add a dash of salt to taste, and bring to a boil.
  2. Reduce heat and simmer for 20 minutes or until the chicken is tender.
  3. Remove the chicken from the broth, set aside.
  4. Meanwhile, mix the ground beef, onion, garlic, bread crumbs and parsley in a bowl. Add salt and pepper to taste.
  5. Scoop out a spoonful and make small meatballs. Add to broth.
  6. Bring broth back to a boil, reduce heat, let simmer for 15 minutes.
  7. Add chicken, escarole and cook for another 10 minutes.
  8. Whisk the eggs with the cheese in the bowl. Slowly whisk into the broth. Cook for another 5 minutes.
  9. Transfer into serving bowls and serve.
