  • ½ medium onion, finely chopped
  • 4 garlic cloves, minced
  • ¼ lb. ground beef or turkey
  • 3 tablespoons chicken broth
  • 3 cups kale, finely chopped
  • 2 large eggs
  • 3 egg whites
  • ½ cup grated Gruyere cheese
  • Salt and pepper to taste

  1. Heat broiler on low.
  2. Heat 1 tablespoon broth in stainless steel skillet. Cook onion over medium heat, for about 3 minutes, stirring often.
  3. Add garlic, ground beef or turkey, and cook for 3 minutes on medium heat.
  4. Add kale and 2 tablespoons broth. Cover and reduce heat to low, cook covered about 5 minutes. Season with salt, pepper and stir.
  5. Wisk eggs, pour on top of mixture evenly. Cook on low for 2 minutes without stirring.
  6. Sprinkle cheese evenly on top and put under broiler in middle of oven, about 7 inches from the heat source. Cook until firm, about 2-3 minutes being careful not to burn the top.’
  7. Carefully remove with potholder, slice and serve
