The hints of rosemary combined with the garlic lemon flavors will delight your family.
Ingredients
  • 4 boneless, skinless chicken breasts, cut into bite size pieces
  • 3 lbs. red potatoes, cut into bite size pieces
  • Zest and juice from one lemon
  • One additional lemon, juiced
  • 5 garlic cloves, minced
  • 1 small onion, diced
  • 2 tablespoons fresh rosemary
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions
  1. Preheat oven to 450 degrees.
  2. Bring water to boil in large pot. Add potatoes and bring to boil. Cook for 8 minutes, drain, set aside.
  3. In large bowl combine oil, zest, juice, garlic, and rosemary. Add chicken, potatoes, and toss until coated. Add to greased 9″ x 13″ pan. Bake for 60 minutes and serve.
