Lemon Marinated Chicken with Garlic Tomato Sauce

Lemon Marinated Chicken with Garlic Tomato Sauce

This delectable dish has an amazing sauce which is light yet full of flavor.
  • 16 oz. angel hair pasta, cooked
  • 1 lb. skinless chicken breast, cut into bite sized pieces
  • Parmesan cheese and parsley for garnish
  • Salt and pepper to taste
  • Marinade:
  • 4 tablespoons extra virgin olive oil
  • 1 teaspoon dried thyme
  • 2 teaspoons fresh rosemary, chopped
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • Zest from a lemon
  • Lemon juice from half of lemon
  • Sauce:
  • 4 oz (1/2 stick) unsalted butter
  • 4 large garlic gloves, minced
  • 2 tablespoons flour
  • 2½ cup chicken broth
  • ½ tablespoon dried basil
  • 2 cups grape tomatoes
  • ¼ teaspoon crushed red pepper flakes

  1. Combine chicken, olive oil, thyme, rosemary, salt, pepper, lemon zest, and lemon juice in bowl. Toss to coat well, cover and refrigerate 30 minutes or overnight.
  2. Heat 1 tablespoon olive oil in large saucepan over medium heat. Add chicken with marinate to pan and saute 6 – 8 minutes until chicken is cooked. Using slotted spoon, remove chicken from pan retaining liquid, set aside.
  3. Melt butter in pan over medium high heat then add garlic. Cook 3 – 5 minutes.
  4. Add flour and cook for 1 minute.
  5. Add chicken broth, tomatoes and basil to pan. Bring to a boil, and simmer over medium high heat for 10 minutes.
  6. Meanwhile cook pasta according to directions.
  7. Season with salt and pepper. Add chicken, pepper flakes and cook for 1 minute.
  8. Drain pasta and combine with sauce in pan, stirring well.
  9. Garnish with parsley and Parmesan cheese, serve.
