Linda’s Tuscan Chicken

My wife’s friend Linda was the inspiration for this dish. There are so many complex and wonderful flavors in this meal. Rustic bread slices are the perfect companion to scoop up all of the remaining liquid in the bowl.
  • 2 lbs. chicken breast tenders
  • 3 tablespoons extra virgin olive oil
  • 3 slices prosciutto, chopped
  • 1 medium onion, sliced in strips
  • 1 each of yellow, red, and green bell peppers, sliced in strips
  • 2 cloves garlic, minced
  • ½ cup green olives, chopped
  • 1 can (14 oz) diced tomatoes with liquid
  • ½ cup chicken broth
  • 2 teaspoons dried basil
  • ¼ teaspoon dried oregano
  • ⅛ teaspoon cayenne pepper
  • Salt and pepper to taste

  1. In large pan heat 2 tablespoons olive oil over medium heat, add chicken, and season with salt and pepper. Brown chicken and set aside.
  2. Heat remaining olive oil, add prosciutto and cook until browned.
  3. Add onions, peppers, season with salt and pepper, and cook until onions are tender.
  4. Add garlic, olives and cook for 2 minutes.
  5. Add tomatoes with liquid, broth, basil, oregano, cayenne pepper and stir. Add chicken and bring to boil. Reduce to simmer, cover, and cook for 12 minutes.
