Moroccan Salmon With Apricot Orange Sauce

The tangy sweetness of this dish will bring your family back for seconds.
Ingredients
  • 2 navel oranges, rind removed, sliced thin
  • 2 fresh apricots (one diced, one sliced thin)
  • ½ red onion sliced thin
  • 6 tablespoons extra virgin olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ¼ teaspoon cinnamon
  • 1¼ teaspoon salt
  • 6 pieces fresh salmon (approx 5-6 oz. each)
  • ½ cup sliced black olives
  • 12 oz. salad greens
  • Cooked couscous

Instructions
  1. Add slices from one orange, one apricot diced, 1 tablespoon red onion, olive oil, and spices to bowl, mix well. Add mixture to large non-stick pan and cook over medium heat 5-6 minutes. Add salmon and cook 3-5 minutes on each side until done.
  2. Meanwhile, add salad greens, red onion, orange slices, apricot slices, tablespoon of olives, and drizzle with olive oil.
  3. Place cooked salmon on top of salad and serve with cooked couscous.
