Orange Rosemary Pork Chops

Serves: 4

  • 4 boneless pork chops
  • 1 tablespoon fresh rosemary, chopped
  • 2 tablespoons extra virgin olive oil
  • ¼ onion, thinly sliced
  • ⅓ cup beef broth
  • ⅓ cup juice from orange
  • 1 teaspoon orange zest
  • Salt and pepper to taste

  1. Season chops with rosemary, salt and pepper on each side.
  2. Heat oil in a large skillet over medium-high heat.
  3. Add chops and cook 5 – 6 minutes each side.
  4. Set aside and cover to keep warm.
  5. Add onion to the pan and cook until translucent, stirring occasionally.
  6. Deglaze pan with broth and orange juice, making sure to remove browned bits from the bottom of the pan.
  7. Add zest and boil until liquid is reduced by half, about 3 minutes.
  8. Pour sauce over chops, garnish with rosemary, and serve.
