Orange Rosemary Pork Chops

Ingredients
- 4 boneless pork chops
- 1 tablespoon fresh rosemary, chopped
- 2 tablespoons extra virgin olive oil
- ¼ onion, thinly sliced
- ⅓ cup beef broth
- ⅓ cup juice from orange
- 1 teaspoon orange zest
- Salt and pepper to taste
Instructions
- Season chops with rosemary, salt and pepper on each side.
- Heat oil in a large skillet over medium-high heat.
- Add chops and cook 5 – 6 minutes each side.
- Set aside and cover to keep warm.
- Add onion to the pan and cook until translucent, stirring occasionally.
- Deglaze pan with broth and orange juice, making sure to remove browned bits from the bottom of the pan.
- Add zest and boil until liquid is reduced by half, about 3 minutes.
- Pour sauce over chops, garnish with rosemary, and serve.
