Peruvian Chicken Soup – Aguadito de Pollo

Ingredients
- 3 boneless chicken breasts, diced into small pieces
- 3 tablespoons extra virgin olive oil
- Medium onion, diced
- 2 bunches cilantro, finely chopped
- 2 garlic cloves, minced
- 2 Yukon Gold potatoes, diced into small pieces
- 1 cup frozen peas
- 10 cups chicken broth
- 1 cup uncooked white rice
- Salt and pepper to taste
Instructions
- Heat olive oil in large stockpot over medium high heat. Add onions and cook 4 – 5 minutes, stirring occasionally. Add garlic, chicken, season with salt and pepper, and cook for 5 minutes, stirring occasionally. Add cilantro and cook for 1 minute. Add broth, peas, potatoes and rice. Bring to boil and then simmer 20 – 25 minutes until potatoes are cooked.
