Ingredients
  • 3 boneless chicken breasts, diced into small pieces
  • 3 tablespoons extra virgin olive oil
  • Medium onion, diced
  • 2 bunches cilantro, finely chopped
  • 2 garlic cloves, minced
  • 2 Yukon Gold potatoes, diced into small pieces
  • 1 cup frozen peas
  • 10 cups chicken broth
  • 1 cup uncooked white rice
  • Salt and pepper to taste
Instructions
  1. Heat olive oil in large stockpot over medium high heat. Add onions and cook 4 – 5 minutes, stirring occasionally. Add garlic, chicken, season with salt and pepper, and cook for 5 minutes, stirring occasionally. Add cilantro and cook for 1 minute. Add broth, peas, potatoes and rice. Bring to boil and then simmer 20 – 25 minutes until potatoes are cooked.
