This icebox cake recipe is a quick and easy solution for hot summer evenings.
  • 10 graham crackers
  • 12 oz. frozen whipped topping
  • 10 oz. frozen blackberries, thawed

  1. Cover the bottom of a 9 x 11 pan with plastic wrap, making sure to overlap wrap by 2 inches over all sides.
  2. Add frozen whipped topping, thawed blackberries to large bowl and mix until well combined and smooth.
  3. Place 4 – 5 graham crackers at the bottom of the pan.
  4. Add ½ of berry mixture over top of crackers making sure to cover evenly.
  5. Add remaining graham cracks over mixture.
  6. Add remaining berry mixture over top of grahams and smooth out.
  7. Place cake in freezer for minimum of 2 hours to set.
