This dish is a yummy bowl of spicy chicken perfection. You can adjust the spiciness of this meal by altering the amount of red pepper flakes.
  • 2 lbs. chicken breast, cut into 1″ pieces
  • 1 lb. penne pasta
  • 1 large onion, chopped
  • 6 tablespoons extra virgin olive oil
  • 6 garlic cloves, minced
  • 2½ teaspoons crushed red pepper flakes
  • 1 cup chicken broth
  • 1 cup heavy whipping cream
  • 1 can (28 oz) San Marzano crushed tomatoes
  • ½ teaspoon dried oregano leaves
  • 1 tablespoon parsley flakes
  • 1 tablespoon dried basil
  • Salt and pepper to taste

  1. Cook pasta and remove before al dente, set aside.
  2. Meanwhile, heat 3 tablespoons olive oil in large pan over medium heat. Add onions and cook 3 – 4 minutes until tender.
  3. Add garlic, red pepper and cook 3 – 4 minutes until onions are tender, set aside.
  4. Heat 3 tablespoons olive oil, add chicken and cook just until pink no longer visible, approximately 5 – 6 minutes.
  5. Add chicken broth, onion mixture, tomatoes and oregano to pan. Simmer over low heat for 10 – 12 minutes until sauce begins to thicken.
  6. Add heavy cream, parsley, basil, and season with salt and pepper. Cook for 4 minutes.
  7. Add pasta to pan and cook for 2 – 4 minutes until pasta is warmed.
