If you love spicy & tangy sauces with a hint of sweetness then you’ll love this dish. The aroma from the sauce will make the family run to the kitchen in anticipation.
Ingredients
- 2 lbs. chicken breast, cut into bite-sized pieces
- 1 bunch bok choy, chopped, green leaves removed
- 2 carrots, chopped
- 7 tablespoons olive oil
- 6 garlic cloves, minced
- 8 tangerines, juiced (approximately 1½ cups)
- ¾ cup soy sauce
- 6 tablespoons honey
- 1 tablespoon sriracha chili sauce
- 2 teaspoons sesame oil
- 1 bunch green onions, chopped
- Steamed white rice
Instructions
- Remove 6 bok choy leaves for garnishment, set aside.
- Juice tangerines into medium bowl, add soy sauce, honey, sriracha sauce, sesame oil, whisk well, and set aside.
- In large pan heat 3 tablespoons olive oil on medium high heat. Add bok choy, carrots and cook 10 – 15 minutes until tender, set aside.
- Add 3 tablespoons olive oil to same pan over medium heat. Add chicken and cook 10 minutes until done, stirring occasionally.
- Meanwhile, in medium pan heat 1 tablespoon olive oil over medium heat, add garlic and cook for 2 minutes. Add tangerine sauce to pan, bring to boil, and simmer until sauce reduces and begins to thicken, approximately 8 – 10 minutes.
- Place bok choy leaf on plate, add rice, vegetables, and top with chicken. Spoon tangerine sauce over plate and garnish with green onions.
