Tangerine Honey Chicken With Toasted Almonds

The sauce on this dish is a delicious combination of tangy and sweet. This is a great meal if you are short on time and need to put something together quickly.
Ingredients
  • ½ cup slivered almonds
  • 3 tablespoons extra virgin olive oil
  • 1½ lbs. chicken tenders
  • Salt and pepper to taste
  • 4 garlic cloves, minced
  • 6 tablespoons soy sauce
  • 4 tangerines, juiced
  • 4 tablespoons honey
  • Cooked white rice

Instructions
  1. Heat almonds over medium heat in non-stick frying pan until toasted, approximately 7-10 minutes, set aside.
  2. In small sauce pan heat 1 tablespoon olive oil over medium heat, add garlic and cook until light brown.
  3. Add soy sauce, tangerine juice, honey, stir, and bring boil over medium heat. Cook for 8-12 minutes until sauce reduces by half, stirring occasionally.
  4. Meanwhile, heat 2 tablespoons olive oil over medium heat, add chicken, salt and pepper to taste. Cook 4 – 6 minutes on each side.
  5. Place chicken over bed of rice, top with almonds, drizzle sauce over chicken and rice.
