  • 6 tablespoons extra virgin olive oil
  • 4 garlic cloves, minced
  • 2 eggs
  • 6 oz. extra firm tofu, diced
  • 8 cups chicken broth
  • 10 oz. pad thai noodles
  • 4 tablespoons soy sauce
  • ½ tsp sriracha chili sauce
  • 2 tablespoons fish sauce
  • ½ cup roasted edamame, crushed
  • ½ cup green onions, thinly sliced
  • Cayenne pepper for garnish

  1. Heat oil in large stock pot over medium heat. Add garlic and cook for 1 minute. Add eggs and cook for 1 minute. Add tofu and cook 3 – 5 minutes.
  2. Add broth, noodles, soy sauce, sriracha sauce, fish sauce, and edamame. Cook 5 – 6 minutes until noodles are done.
  3. Serve in bowls and garnish with green onions, and cayenne pepper.
