Tomato Shallot Salmon

The texture of the shallots combined with the lemon and tomatoes makes this a flavor bonanza.
  • Four 5 oz. salmon filets
  • 3 tablespoons extra virgin olive oil
  • Juice from a lemon
  • 3 medium tomatoes, chopped
  • 2 shallots, diced
  • ½ teaspoon thyme
  • ½ teaspoon oregano
  • Salt and pepper to taste
  • Cooked white rice
  • Steamed asparagus

  1. Preheat BBQ to 450-500 degrees.
  2. In large bowl combine olive oil, lemon juice, tomatoes, shallots, thyme, oregano, salt and pepper.
  3. Place two 12 inch squares aluminum foil on counter, scoop tomato mixture in center, place salmon filet on top, scoop more tomato mixture over salmon. Fold so that foil forms seal around salmon. Repeat for remaining filets.
  4. Add foil packets to BBQ. Cook 8 minutes on each side. Unwrap and serve alongside rice and asparagus.
