For an extra flavor kick add ¼ cup of crumbled bacon or prosciutto to the potato mixture.
Ingredients
  • 2 tablespoons extra virgin olive oil
  • 6 medium russet potatoes, scrubbed, pat dry
  • 1 onion, diced
  • 1 can (14.5 oz.) fire roasted diced tomatoes
  • 1 bunch spinach, washed, chopped
  • 4 oz. crumbled feta cheese

Instructions
  1. Preheat oven to 425 degrees.
  2. Place potatoes on baking sheet and cook for 60 minutes.
  3. Remove potatoes from oven and allow to cool for 3 – 4 minutes.
  4. Cut each potato lengthwise, scoop insides into large bowl, and mash.
  5. Heat olive oil in pan over medium heat. Add onions and cook 6 – 8 minutes until tender.
  6. Add tomatoes, spinach and cook until leaves are wilted.
  7. Add tomato mixture, and half of feta cheese to bowl and mix well.
  8. Place potato skins back onto baking sheet and add mixture to all skins.
  9. Garnish with remaining feta and broil in oven 4 – 8 minutes until cheese begins to brown.
